Preparation steps

Peel the mango and cut the flesh from the core. Cut 12 cubes, approximately 4 x 4 cm (approximately 2 x 2 inches). Cut the remaining pulp into small cubes.

Rinse the cilantro, shake dry, pluck off the leaves and chop finely. Mix the cilantro with the small diced mango, rice vinegar and 2 tablespoons of oil and season with a little salt. Set aside and let rest.

Rinse oysters, open shells and remove the oyster meats. Pat dry and sprinkle with some spice mix. Coat with flour, shaking off excess, then dip in the whisked egg and coat with panko breadcrumbs.

Heat the vegetable oil to about 170°C (approximately 325°F) and briefly fry the oysters. Fry the mango cubes on all sides in the remaining oil. Place the marinated mango on top of the fried mango cubes. Stick an oyster on a wooden skewer and place on the mango cubes. Serve immediately.
