1 shallot
60 grams shrimp (ready to cook peeled and cleaned)
1 Tbsp olive oil
freshly ground peppers
1 Tbsp minced Basil

Preparation steps

Rinse, peel and snap ends off asparagus. Cook asparagus in salted boiling water, 18-25 minutes. Blanch tomatoes, then peel, quarter and remove seeds. Cut tomatoes into strips. Peel and finely dice shallot. Sauté shallots briefly in hot oil. Add tomatoes and shrimp and cook 3-4 minutes. Season with salt and pepper. Finally, stir in chopped basil.

Drain asparagus, toss with butter and season with a little salt. Arrange asparagus and shrimp on plates and garnish with basil.
