Fried Chicken Wontons
Ingredients
- For the wontons
- 50 grams Rice flour
- salt
- 150 grams Pastry flour
- 200 grams Chicken breasts
- 1 shallot
- ½ bunch cilantro
- 3 Tbsps Coconut
- salt
- freshly ground peppers
- ground coriander
- 500 milliliters vegetable oil
Preparation steps
For the dough, mix rice flour with some salt and 150 ml (approximately 2/3 cup) boiling water. Let stand about 20 minutes, Stir in the all-purpose flour and let stand for about 30 minutes.
For the filling, finely chop the chicken breast with a sharp knife. Peel and finely chop the shallot. Rinse the cilantro, shake dry and finely chop. Mix chicken, scallion, cilantro and coconut puree. Season with salt, pepper and coriander.
Roll out the dough thinly and cut into 8 x 8 cm (approximately 3 x 3 inch) pieces. Place a small amount of the filling on one side of the dough pieces. Brush the edges with cold water. Fold the dough over the filling to form a triangle, pressing the edges together.
Heat the oil and fry the wontons in batches for 3 to 4 minutes. Remove with a slotted spoon and drain on paper towels. Serve with chutney.
