Preparation steps

1.

Salt and pepper the meat in a bowl.

Rinse, trim and chop the spring onions. Peel the garlic and ginger, and finely chop. Mix with the ground meat. Portion the filling in the center of the dumpling sheets. Bring all the sides up together to form a tiny parcel and seal tightly. If necessary, moisten with a little water.

Fry in batches until golden brown, 3-4 minutes. Drain on paper towels. Keep warm in an 80°C (approximately 175°F) oven.

Blanch the chives briefly dip in boiling water, shock them in ice water and pat dry on paper towels.

5.

Wrap the wontons with one spring onion and serve.
