4 White rolls (day old)
2 eggs
80 grams Pastry flour
ground paprika
2 liters vegetable oil (for frying)
1 lemon
1 bunch parsley
salt

Preparation steps

Rinse chicken, pat dry, remove skin and cut into eight parts. Combine flour, salt, pepper and paprika. Wisk eggs. Place flour mixture, eggs, and breadcrumbs in three sperate bowls. Dredge each piece of chicken in the flour, then the eggs, then the breadcrumbs. Heat oil in a pan and cook chicken on all sides until golden brown, about 15 minutes. Remove and drain.

Roughly chop parsley and flash fry in remaining oil, about 30 seconds. Remove and drain on paper towels. Cut lemon into wedges. Garnish chicken with lemon and parsley. Serve hot with potato salad.
