- 2 Tomatoes
- ½ shallot
- ½ garlic clove
- 8 Tbsps olive oil
- 4 Tbsps White vinegar
- salt
- freshly ground peppers
- 1 pinch sugar
Preparation steps

Blanch the tomatoes in boiling water. Rinse under cold water and peel. Quarter the tomatoes, remove the core, and finely dice.

Peel and finely chop the shallot and garlic, then mix with the oil and vinegar. Mix in the tomatoes, and season to taste with salt, pepper, and sugar.
