10 ozs fresh Berry (raspberries, strawberries, blueberries and blackberries)
2 Tbsps lemon juice
18 ozs Yogurt
3 Tbsps powdered sugar
5 ozs Whipped cream

Preparation steps

1.

Rinse the berries as needed, trim and puree with the lemon juice. Press the fruit puree through a sieve.

Mix the yogurt with the powdered sugar and the fruit puree. Beat the cream until stiff and fold in. Pour the yogurt mixture into a shallow dish and freeze at least 3 hours. Meanwhile, vigorously stir every 20 minutes (to prevent the formation of large ice crystals).

3.

Stir again just before serving, spoon into a pastry bag fitted with a star tip, pipe into bowls and garnish as desired with fresh berries.
