Folded Salmon with Capers and Lime
- 1 Tbsp white wine vinegar
- 1 Tbsp sunflower oil
- 1 pinch sugar
- 1 onion (sliced)
- 1 small Iceberg lettuce
- 1 cup microgreen (cress or watercress)
- 1 Lime (sliced)
- ⅔ cup Caper
- 2 ⅔ cups smoked Salmon (thinly sliced)
Whisk together the vinegar, oil and sugar and season to taste with salt and pepper.
Toss the onion, lettuce and watercress in the dressing.
Arrange on 4 serving plates and put a slice of lime on each plate. Scatter with the capers.
Place the smoked salmon on top of the salad and sprinkle with the pepper. Garnish with parsley.
