- 2 Lettuce (rinsed and roughly torn)
- 1 handful Bean sprout (rinsed)
- 1 green Bell pepper (rinsed; seeded and cut into strips)
- 2 Tbsps sesame oil
- 1 ½ cups shrimp (peeled; deveined and ready to cook)
- 2 Tbsps low-sodium soy sauce
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 ripe Avocado (peeled and diced)
- ⅓ cup plain Yogurt
- 2 Tbsps fresh lemon juice
- 4 Tortillas

Preparation steps
1.
Heat the oil in a large skillet or wok, and saute the peppers until tender crisp, about 3 minutes. Add the shrimp and saute until cooked through, about 3 minutes. Add the bean sprouts and toss with the peppers and shrimp. Season the soy sauce, salt and pepper. Reduce heat and keep warm.

Mash the avocado with a fork. Stir in the yogurt and season with salt and lemon juice.

Heat the tortillas according to the package instructions.

Spread the avocado cream over the warm tortillas. Arrange the lettuce and shrimp mixture in the center of the tortillas. Roll, slice and serve.
