4 Flatbread (about 6" in diameter)
1 ½ bunches Arugula
10 ozs Bresaola (thinly sliced)
4 ozs Parmesan (freshly grated)
freshly ground peppers
Basil (for garnish)

Preparation steps

1.

Rinse arugula and remove tough stems and spin dry.

Spread flatbread with bresaola and place arugula evenly over bresaola and sprinkle 2/3 of parmesan over arugula. Season with pepper and loosely roll up. Heat 2-3 tablespoons oil in grill pan and toast panini until crispy and brown for about 5 minutes on both sides until cheese melts.

3.

Cut each in half and sprinkle with remaining parmesan and basil and serve immediately.
