250 grams Smoked salmon (wild salmon if possible)
200 grams Crème fraiche
50 grams Whipped cream
2 eggs (beaten)
2 scallions
1 lemon (juiced)
salt
freshly ground peppers

Preparation steps

Finely puree the salmon and mix with the beaten eggs, the sour cream and cream. Finely chop the green parts of the scallions and stir into the salmon mixture. Season with lemon juice, salt and pepper. Pour the mixture into four ovenproof flan pans.

Place the ramekins in an oven broiler pan and pour enough boiling water to reach 3 cm (approximately 1 1/4 inches) up the sides of the ramekins. Bake in a convection oven preheated to 125°C (approximately 250°F) about 30 minutes. Turn out from the ramekins and and serve lukewarm or chilled.
