400 grams very fresh fish fillets (such as seabass, turbot, sea bass)
1 Lime (juiced)
1 tsp honey
Sea salt
200 grams Cherries
to garnish
1 handful Dill
1 tsp peppercorns

Preparation steps

1.

Brush a plate with a little of the oil. Rinse the fish, pat dry, and slice very thinly. Lay the slices of fish on the plates. Mix the remaining oil with the lime juice and oil. Season to taste with salt. Drizzle the fish with the dressing (minus 2 tablespoons).

2.

Rinse the cherries, remove the stems and seeds, and cut into slices. Arrange the cherries over the top of the fish and drizzle with the remaining dressing. Garnish with the dill and pink pepper, and serve.
