Preparation steps

Wrap the beef in plastic wrap and put in the freezer for about 30 minutes. Carve into thin slices with a sharp knife. Place between pieces of plastic wrap and gently flatten with the flat side of meat knocker. Arrange on four chilled plates.

Mix the lemon juice with the olive oil and season with salt. Drizzle the marinade on the Carpaccio. Season with pepper and serve garnished with grated Parmesan.
