- 1 shallot
- 1 garlic clove
- 1 Tbsp butter
- 600 grams fish fillets (such as trout)
- 1 egg
- 1 Tbsp freshly chopped rosemary
- 3 Tbsps breadcrumbs
- salt
- lemon juice
- freshly ground peppers
- 3 Tbsps vegetable oil (for frying)
- 250 grams Sour cream
- 2 Tbsps Salmon caviar
- scallions (for garnish)

Preparation steps
1.
Peel and finely chop the shallot and garlic. Saute in hot butter until translucent. Set aside and allow to cool.

Rinse the fish, pat dry and coarsely chop. Mix the egg with the rosemary, shallot, and garlic. Add the fish and breadcrumbs so that the mixture becomes malleable. Season with salt, lemon juice, and pepper and form 8 small patties.

Fry until golden brown (4-5 minutes) on each side in hot oil.

Stir the sour cream until smooth, then add 1-2 tablespoons of caviar and season with salt and pepper. To serve, garnish the patties with the sour cream, and sprinkle with chives.
