400 grams fish fillets (such as cod)
1 egg
2 Tbsps Crème fraiche
½ whole lemon (zested and juiced)
salt
freshly ground peppers
2 Tbsps scallions
100 grams sour Whipped cream
4 Tbsps Caviar

Preparation steps

Preheat the oven to 180°C (approximately 350°F) convection/200°C (approximately 400°F convention). Grease ramekins with softened butter.

Rinse the fish, pat dry and cut into pieces. Mince finely with the egg, the cream, the lemon zest, a dash of lemon juice in a blender and season with salt and pepper. Stir in the chives and spoon the mixture into the ramekins. Smooth and place in a baking dish or roasting pan. Pour hot water up to about one third of the sides of the ramekins.

Bake in the preheated oven for about 30 minutes until thickened.

Stir the sour cream and smooth into a puddle on a plate. Gently unmold the fish flan from the ramekins and place on the sour cream, top each flan with about 1 tablespoon of caviar and serve.
