- 8 Leeks
- ⅔ cup plain flour
- ½ cup Pine nuts
- ⅔ cup chilled butter (plus a small amount for greasing)
- 2 Tbsps Oil
- Rock salt

Tip: you can replace the leeks with diced courgettes, steaming them for 10 minutes.
Preparation steps
1.
Wash, dry and finely chop the leeks. In a pan, melt 50 grams of butter with the oil. Add the leeks and gently fry over a low heat for about 20 minutes, stirring regularly.

Place the salmon steaks in a steaming basket and sprinkle with the rock salt and cook for 10 minutes.

Meanwhile, pour the flour into a mixing bowl, add the rest of the chopped butter and work with your fingertips until you get a sandy texture. Chill in the fridge. Grease the gratin dish.

Preheat the oven to 180°C (160° fan) | 350F | gas 4.

Crumble the salmon steaks into the bottom of the dish. Cover with leeks and the crumble mixture and sprinkle with pine nuts. Place in the oven and cook for 30 minutes.
6.
Serve straight from the oven.
