Preparation steps
Remove the wrapping from the pastry sheets and leave to rest, covered with a damp tea towel.
Grease a large baking sheet with butter.
For the filling, heat 20 grams of butter in a small saucepan (approximately 1 ounce). Stir in the flour, cook briefly and then stir in the milk and the cream. Bring to a boil while stirring until the sauce thickens. Set aside.
Crumble the feta with a fork and stir with the Graviera into the thick sauce. Add the herbs and season everything with pepper and nutmeg.
Preheat the oven to 180°C (approximately 350ºF).
Lay the 2 sheets of pastry over each other and cut into strips of about 15 x 20 cm (approximately 6 x 8 inches).
(Yufka pastry sheets are thicker and do not need to be double-layered)
Spread the filling on top and fold into parcels.
Place all parcels on a baking sheet. Brush with butter and shower with sesame seeds.
Bake for 15-20 minutes until golden brown.
Serve hot.
