For the cakes
½ cup butter
½ cup superfine caster sugar
2 eggs (beaten)
1 cup self-rising flour (sifted)
1 tsp vanilla extract
cup Chocolate chip
For the white chocolate icing
cup white chocolate
cup unsalted butter
1 ¼ cups powdered sugar
To decorate
powdered sugar
1 ¾ cups white Sugar paste
1 ⅛ cups blue Sugar paste
edible, silver Bauble

Preparation steps

1.
For the cakes: preheat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 2 x 12 mini cupcake tins.

Beat the butter and sugar until light and creamy. Gradually beat in the eggs until well blended.

Sift in the flour and fold in gently with the vanilla and chocolate chips, until just combined.

Spoon into the paper cases and bake for 10-15 minutes until golden and springy to the touch. Place on a wire rack to cool completely.

For the white chocolate icing: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water, stirring once. Leave to cool.

Beat the butter and icing sugar in a bowl until creamy. Beat in the melted chocolate until smooth. Spread over the cakes.
7.
Roll out half the white sugarpaste on a surface lightly dusted with icing sugar and cut out 24 rounds, the same diameter as the cakes. Place on top of the icing.
8.
Roll out the remaining white sugarpaste and cut out letters with small alphabet cutters and snowflakes, using a cookie cutter or card template
9.
Roll out the blue sugarpaste on a surface lightly dusted with icing sugar and cut out 24 snowflakes using a cookie cutter or card template and 24 small discs with a scalloped edged cutter. Brush the discs lightly with water and attach to the cakes.
10.
Attach a letter to each cake with a dab of water.
11.
Place the snowflakes on the cakes and press in silver balls, as in the photo.
