Fennel and Orange Salad
Peel oranges with a sharp knife and remove all white skins. Cut oranges into quarters lengthwise and then cut crosswise into slices. Reserve any resulting orange juice.
Rinse fennel, trim, cut in half lengthwise, remove stalk and cut fennel into small cubes. Set fennel leaves aside. Peel onion and cut into rings. Mix orange pieces in a bowl with fennel cubes and onion rings.
Mix olive oil in a bowl with reserved orange juice, rosemary and pepper. To serve, arrange all ingredients on plates, sprinkle with orange juice mixture and garnish with reserved fennel leaves.
