- 125 grams dried chickpeas
- 400 grams Ground lamb
- 1 onion
- 2 garlic cloves
- 2 Tbsps freshly chopped cilantro
- 2 Tbsps freshly chopped parsley
- 1 tsp Aleppo pepper (Dried red pepper flakes)
- ½ tsp Cumin (ground)
- 1 egg
- breadcrumbs (as needed)
- salt
- cayenne pepper
- 2 Tbsps olive oil
- 12 Food-safe craft sticks
- 4 Mini flatbreads
- Lettuce (for garnishing)
- Tomatoes (for serving)

Preparation steps

Soak chickpeas overnight in cold water. Next day, drain chickpeas and mash. Peel onion and garlic and finely dice both. Combine with mashed chickpeas, ground meat, herbs, spices, egg and breadcrumbs, mix well. Add as much breadcrumbs as to make malleable mixture. Season with salt and cayenne pepper.

Place wooden sticks in cold water for about 10 minutes. With wet hands, shape falafel around wooden sticks and grill on a hot grill for about 5 minutes or until nicely browned, turning often. Lightly grill flatbread. Place falafel and flatbread onto plates and garnish with lettuce leaves and tomato wedges. Serve.
