- Mint Yogurt
- 1 cup plain Yogurt
- ½ cup fresh mint (chopped)
- 1 clove garlic cloves (minced)
- 1 Tbsp fresh lemon juice
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- Falafel
- 1 cup chickpeas (garbanzo beans)
- 1 small onion (diced)
- 2 cloves garlic cloves
- ¼ cup fresh cilantro (chopped)
- ¼ cup fresh parsley (chopped)
- 1 tsp ground cilantro
- 1 tsp ground Cumin
- 1 Tbsp lemon zest
- 2 Tbsps Whole wheat flour
- ½ tsp baking soda
- cayenne pepper (to taste)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- Oil (for frying)

Whisk all ingredients together until well combined. Cover and refrigerate at least one hour.

Place the chickpeas, onion, garlic, cilantro, parsley, coriander, cumin, and lemon zest in a food processor and pulse until it forms a coarse meal.

Sprinkle in the flour and baking soda and pulse a few times to combine, then test the mixture to make sure that it holds together adding more flour until it does. Refrigerate the mixture in a covered container for at least 2 hours.

Season the mixture with cayenne pepper, salt, and black pepper, mixing in with fingers. Form the mixture into balls or patties. Fry the balls in small batches until golden brown, about 4-6 minutes and set aside on paper towels to drain.
7.
Transfer falafel to a serving dish and serve with mint yogurt on the side.
