- 1 egg white
- 4 ½ cups powdered sugar
- ½ tsp cream of tartar
- 1 tsp peppermint extract

Preparation steps
1.
Lightly whisk the egg white in a mixing bowl.

Gradually sift in the icing sugar and cream of tartar, beating well to make a stiff paste. Beat in the peppermint essence.
3.
Turn out the mixture onto a surface lightly dusted with icing sugar. Knead for a few minutes until smooth and pliable.
4.
Roll out about 5mm|1/4" thick and cut out small rounds, about 2.5cm| 1", with a cutter.
5.
Place on trays lined with non-stick baking paper and leave overnight to dry.
