500 grams Strawberries
1 Tbsp liquid honey
1 Tbsp lemon juice
1 Vanilla bean
800 milliliters milk
2 Tbsps sugar
1 pinch salt
1 Tbsp Espresso powder (Instant)
175 grams Arborio rice
Cinnamon sugar (to sprinkle, to taste)

Preparation steps

1.

Rinse and hull the strawberries, cut into bite-size pieces and mix with the honey and lemon juice in a bowl.

2.

Split the vanilla bean lengthwise and scrape the seeds into a saucepan along with the bean and the milk. Add the sugar, salt and espresso and bring to a boil. Stir in the rice, cover and cook over low heat, stirring occasionally until the rice is tender, about 40 minutes.

3.

Remove the vanilla bean and serve the rice pudding with strawberries.

4.

Sprinke with cinnamon sugar to taste.
