- 18 ozs ripe Quince (peeled and cored weight, chopped)
- ⅔ cup water
- 2 cups sugar
- 1 Tbsp lemon juice
- 3 Tbsps Elderflower liqueur

Preparation steps
1.
Put the quinces and water into a large heavy-based pan. Bring to a simmer and simmer gently until the fruit is soft.
2.
Add the sugar and lemon juice and stir over a low heat until the sugar has dissolved.
3.
Bring to a boil and boil rapidly until setting point is reached. Stir in the elderflower cordial and leave to stand for 10 minutes.
4.
Stir and spoon into hot sterilised jars, cover, seal and label.
