3.333 cups ripe Strawberries (sliced)
3.333 cups Rhubarb (sliced)
1 unwaxed lemon (juiced)
2 ¼ cups Pectin
1 Vanilla bean (halved lengthways, seeds scraped out)

Preparation steps

1.
Mix together the strawberries, rhubarb, lemon juice, sugar and vanilla seeds and leave to steep for one hour.
2.
Bring to the boil and cook for 4 minutes. Puree, transfer to sterilised jars and close tightly. Turn upside down for around 10 min then turn up the right way and leave to cool fully.
