10 grams Citric acid (available at drug stores)

Preparation steps

1.

Shake elderflowers and sort through to remove any wilted or brown flowers (do not rinse). Rinse lemon with hot water and cut into slices. In a saucepan, bring sugar and 1 liter (approximately 4 1/4 cups) water to a boil over low heat, stirring constantly. Simmer about 10 minutes.

Let syrup cool and stir in elderflowers and lemon slices. Transfer mixture to a large pot or another container. Cover, and let syrup infuse about two days.

Strain syrup through a strainer lined with a thin cloth. Bring strained syrup to a boil with citric acid, stirring. Pour syrup into a prepared bottle and tightly seal.
