Preparation steps

1.

Rinse and dry the elderflowers. Rinse the lemons in hot water, and thinly slice. Bring the sugar and 2 liters (approximately 2 quarts) of water to a boil, stirring constantly.

Add the elderflowers and lemon slices, and simmer for 1-2 minutes. Pour the mixture into a large jar and let cool. Seal with plastic wrap, and let infuse for 2-3 weeks in a cool, dark place. 

3.

Drain the syrup, and pour into clean bottles. Seal the bottles tightly. Dilute the syrup with cold mineral water for a refreshing drink.
