Preparation steps

1.

Sort through and shake elderflowers (do not rinse). Rinse lemon with hot water and cut into slices. In a pot, bring sugar and 1 liter (approximately 4 1/4 cups) water slowly to a boil, stirring. Simmer about 10 minutes.

Let syrup cool, then stir in elderflowers and lemon slices. Pour syrup into a large bottle or jar and seal tightly. Let syrup infuse for two days.

3.

Strain syrup through a sieve. To serve, dilute syrup with cold water or mineral water to taste and garnish with elderflowers.
