6 slices Bread (cut thick)
2 fresh eggs
cup milk
¼ tsp ground cinnamon
1 tsp pure vanilla extract
1 pinch salt
2 ripe Banana
pure Maple syrup (to serve)

Preparation steps

1.
In a medium bowl, beat eggs, milk, cinnamon, vanilla and salt together. Mash one banana and add it to the egg mixture.

Heat a lightly oil griddle over medium-high heat.

Dunk each slice of bread into the egg and banana mixture, soaking both sides. Place on griddle, and cook on both sides until golden brown.
4.
Transfer to individual plates. Garnish with banana slices. Serve hot with maple syrup.
