Eggplant Pizzas with Goat Cheese
Thaw dough according to instructions.
Rinse and slice eggplant. Peel and finely chop onion and garlic. Heat olive oil in a nonstick skillet and briefly fry onion, garlic and eggplant slices. Season with oregano, thyme, salt and pepper.
Mix the tomato paste with puréed tomato and season with salt and pepper.
Roll out the pizza dough on a lightly floured surface and cut out circles (about 10-12 cm in diameter, approximately 4-5 inches). Place on parchment paper-lined baking sheet and cover with the tomato sauce. Top with eggplant slices and crumbled goat cheese. Bake in preheated oven at 200°C (gas mark 3-4, fan: 180°C) (approximately 400°F) for about 20 minutes. Season to taste with thyme.
