Egg Pancake with Pork Filling
Wash and dry the herbs. Chop the leaves.
Break the eggs into a bowl and beat well. Add the herbs. Season.
Heat the groundnut oil in a large pan and pour in the beaten eggs. Cook until the omelette is set, turning
it half way through the cooking.
Slide the omelette onto a plate and cover with the slices of ham. Roll the omelette firmly.
Place the rolled omelette on a dish and serve up with a mixed green salad.
