2.333 cups Whole wheat flour
2 cups milk
2 eggs (separated)
2 Tbsps olive oil
10 cups Spinach
½ cup cream cheese
1 Tbsp lemon juice
1.333 cups Turkey ham (cut into strips)
1 scallion (cut into rings)

Preparation steps

1.
Heat the oven to its lowest setting.
2.
Mix together the flour, milk, egg yolks, 1 tsp oil and some salt and steep for about 10 minutes. Beat the egg white until stiff and chill.
3.
Place the spinach in boiling salt water and allow to wilt. Drain well and chop.
4.
Mix together the cream cheese and lemon juice and season with salt and ground black pepper.
5.
Fold the egg white into the pancake mixture and fry 8 pancakes in the remaining oil. Keep the finished pancakes warm in the oven.
6.
Spread the cream cheese mixture onto the pancakes, cover with the spinach, turkey and spring onions, season with salt and ground black pepper and serve immediately.
