450 grams ground almonds
1 tsp cinnamon
1 pinch Ground clove
1 Tbsp Red currant jelly

Preparation steps

Beat the egg whites with the salt until stiff. Gradually sprinkle in the sugar and continue beating until the mixture is shiny. Save 5 tablespoons of the mixture for later use as a glaze. Mix together the almonds, cinnamon, cloves and red currant jelly. Fold into the egg white mixture and work into an easily-shapeable dough. Preheat the oven to 150°C (approximately 300°F) convection.

Line the baking sheets with parchment paper. Roll out the dough until about 5 mm (approximately 1/5 inch) thick, cut out stars and put on the baking sheets. With a small, sharp knife, precisely spread the egg white glaze on the cookies and bake in preheated oven for 15-20 minutes, making sure that the surface remains a beautiful white. Take out of the oven, remove from the sheets and let cool. Stack the cookies one on top of the other and serve.
