- 20 Rice paper (Ø 22 cm)
- 2 carrots (sliced and cut into sticks)
- 1 ¾ ozs Glass noodles (raw)
- 10 Lettuce (e. g. cos lettuce)
- 1 ⅓ cups smoked duck legs (skin removed, cut into thin strips approx. 4–5 cm long)
- ⅓ cup fresh parsley
- 1 yellow pepper (seeds removed, cut into thin stick approx. 4–5 cm long)
- ½ Cucumber (seeds removed, cut into thin sticks approx. 4–5 cm long)
- 4 Tbsps sweet Chili sauce

Preparation steps
1.
Dip the rice paper sheets one after the other in a bowl of lukewarm water until they soften. Remove and lay on kitchen paper and cover with a damp tea towel.
2.
Blanch the carrot sticks in boiling salted water for 1 minute. Remove and drain.
3.
Soften the glass noodles in boiling salted water, drain and dry well.
4.
Lay 2 rice paper sheets on top of one another and lay a lettuce leaf on top. Place the carrots, duck, parsley, pepper, glass noodles and cucumber in the middle.
5.
Fold the rice paper sheets inwards and roll up. Cut each roll in half and arrange with the cut end upwards.
6.
Serve with sweet chilli sauce or soy sauce for dipping.
