Spring Rolls with Duck, Radish and Grapefruit

- 200 grams smoked duck legs
- 2 carrots
- 200 grams Daikon radish
- salt
- 4 leaves Lettuce
- 1 Grapefruit
- 1 sprig Lemon balm
- 4 sheets square Rice paper (about 22 cm)
Preparation steps
For the filling, cut duck breast into thin slices. Peel carrots and radishes and cut into matchstick pieces. Salt radish pieces, let stand about 5 minutes, rinse and pat dry. Rinse lettuce leaves, shake dry and tear into small pieces. Peel grapefruit and cut from membranes into segments. Rinse lemon balm, shake dry and pluck leaves.
Fill a shallow dish slightly larger than the rice paper sheets with water. Spread open a towel near the dish and have a second towel handy. One at a time, soak rice paper sheets in water about 1 minute. Gently spread soaked rice paper sheets on the open towel and pat dry with the second towel.
To assemble spring rolls, arrange filling ingredients up middle of rice paper sheets and roll up, enclosing filling.
Serve spring rolls with a soy-chili dip if desired.
