- 1 ⅛ cups Long grain rice
- 2 carrots (diced)
- 7 ozs Green beans (cut in bite-size pieces)
- 2 Zucchini (chopped)
- 1 ¾ ozs Anchovy (in oil)
- 5 ozs firm Tofu (diced)
- ½ Tbsp Caper (rinsed)
- 1 Tbsp chopped mint
- 3 Tbsps olive oil
- 1 lemon (finely grated zest and juice)
- salt
- peppers

Preparation steps
1.
Cook the rice in a pan of boiling salted water for 6 minutes. Add the carrots, green beans and courgettes and cook for a further 4-5 minutes until the rice is cooked and the vegetables are slightly crunchy.
2.
Drain well and put into a bowl. Stir in the remaining ingredients and mix well with a fork, seasoning to taste with salt and pepper.
3.
Put into a serving dish and leave to become cold.
