1 ⅛ cups Long grain rice
2 carrots (diced)
7 ozs Green beans (cut in bite-size pieces)
2 Zucchini (chopped)
1 ¾ ozs Anchovy (in oil)
5 ozs firm Tofu (diced)
½ Tbsp Caper (rinsed)
1 Tbsp chopped mint
3 Tbsps olive oil
1 lemon (finely grated zest and juice)

Preparation steps

1.
Cook the rice in a pan of boiling salted water for 6 minutes. Add the carrots, green beans and courgettes and cook for a further 4-5 minutes until the rice is cooked and the vegetables are slightly crunchy.

Drain well and put into a bowl. Stir in the remaining ingredients and mix well with a fork, seasoning to taste with salt and pepper.
3.
Put into a serving dish and leave to become cold.
