400 grams Arborio rice (avorio or vialone)
500 milliliters Beef broth
3 Tbsps butter
2 eggs
50 grams Parmesan
200 grams Mozzarella (or provatura cheese)
vegetable oil (or butter for frying)
100 grams breadcrumbs
salt
freshly ground pepper

Preparation steps

1.

Boil beef broth and butter. Add the rice, sprinkle and let soak on a gentle heat. Stir often so that the rice does not stick. Place cooked rice into a bowl, gradually mix with the eggs and the parmesan. Season with salt and pepper. Let cool down.

Cut mozzarella or provatura cheese into tiny cubes. Remove large portions with a spoon the rice and egg mixture and flatten in hand. Place some filling in the centers. Form the rice ball around the filling. Roll in breadcrumbs and place on a plate. Form 30 balls doing this method.

3.

In a saucepan, heat plenty of oil or butter. Pour in the rice balls in portions and fry until golden brown. Drain on paper towels and serve immediately.
