2 tsps red Curry paste
2 Tbsps Peanut oil
1 chili pepper seeds removed, chopped (gloves recommended!)
1 onion (sliced thinly lengthways)
2 cloves garlic cloves (finely chopped)
2 scallions (chopped)
5.333 cups King Oyster mushrooms (sliced lengthways 0.5 cm thick)
4 cups Steak (e. g. loin or flank, chopped into thin strips)
fresh cilantro (a handful of leaves, chopped)
2 Tbsps sweet Chili sauce

Preparation steps

1.
Fry the curry paste in 1 tbsp oil for approx. 1-2 minutes. Add the chillies, onion, garlic, spring onions and mushrooms and fry for approx. 3 minutes, stirring all the time. Remove from the pan.
2.
Heat the remaining oil and fry the beef with the coriander for approx. 5 minutes, stirring all the time.
3.
Add the sweet chilli sauce, stir in the mushrooms and vegetables and season with pepper.
