2 long Cucumber
1 red Bell pepper
1 yellow Bell pepper
6 ozs Feta
2 Tbsps black Olives (pitted)
½ red onion
olive oil
salt
freshly ground peppers
2 Tbsps white balsamic vinegar
Basil (for garnish)

Preparation steps

1.

Peel cucumber and cut into thick slices. Use a teaspoon to remove a portion of the center of each slice, so that the discs are slightly hollowed, but not completed cored.

Rinse bell peppers, cut in half, remove seeds and cut into very small dice. Peel onion and dice finely. Cut feta cheese into small pieces. Cut olives into small pieces.

Mix bell peppers, onion and olives with 3 tablespoons olive oil and season with salt, pepper and vinegar. Let stand 10 minutes. Add cheese and mix briefly.

Fill cucumber slices with the mixture and season with some salt and pepper.

Refrigerate until ready to serve. Garnish with basil leaves.
