For the cucumber cream
200 grams Quark (20% fat)
2 Tbsps Mayonnaise
2 Tbsps lemon juice
white peppers
salt
1 pinch sugar
1 small Cucumber
1 Tbsp finely chopped parsley
3 Tbsps scallions
Also
4 slices Whole Wheat Toast
1 tsp butter
8 slices cooked ham

Preparation steps

1.

Mix quark with the mayonnaise and season with lemon juice, pepper, salt and sugar. Rinse the cucumber, cut into 16 thin slices and set aside. Peel remaining cucumber and grate coarsely. Salt lightly, place into a colander, infuse for about 5 minutes and then squeeze well. Stir grated cucumber into the quark mixture. Mix in parsley and half the chives.

2.

Toast bread until golden brown and lightly spread butter on top. Top with 2 slices of ham and cut each piece of toast into 4 squares. Top with a spoonful of cucumber cream, a slice of cucumber and garnish with chives. Serve fresh.
