- 4 Pork neck
- 1 white onion
- 1 garlic clove
- 3 scallions
- 2 Tomatoes
- 1 orange paprika
- 2 Tbsps vegetable oil (for sauteeing)
- Cajun seasoning
- 220 grams Long grain rice
- 500 milliliters Vegetable broth
- 100 grams cured ham
- 1 tsp oregano
- Tabasco sauce (to taste)

Preparation steps

Cut the pork into 2 cm (approximately 3/4 inch) cubes. Peel the onion and garlic and chop both. Trim, rinse and cut the scallions into rings. Rinse the tomatoes, cut in half, remove the seeds and cut the flesh into small pieces. Rinse, trim and cut the peppers into bite-sized pieces.

Brown the meat in hot oil, sprinkle with Cajun seasoning, then add the onions and garlic and sweat until translucent. Add the rice, sauté briefly, pour in vegetable stock, stir and gently simmer everything covered about 15-20 minutes.

Add the white parts of the scallions and pepper pieces and simmer 5 minutes uncovered. Cut the ham into small cubes or strips. Mix in the tomatoes, the scallion tops, the ham and the oregano, season with Tabasco and serve.
