- For the dip
- ½ cup Mascarpone
- ⅜ cup plain Yogurt
- 1 tsp pink peppercorns (coarsely ground)
- 1 tsp honey
- 1 tsp Lime juice
- salt
- For the chicken
- ¼ cup smooth Peanut butter
- Lime juice
- salt
- freshly ground peppers
- 21 ozs Chicken fillet
- 1 cup chopped Peanuts
- 4 Tbsps vegetable oil
- To garnish
- Fresh herbs

Preparation steps
1.
For the dip: mix the mascarpone with the yoghurt.
2.
Mix together the peppercorns, honey and cream. Season to taste with lime juice and salt.
3.
For the chicken: heat the peanut butter in a small pan until it begins to melt. Season to taste with lime juice, salt and pepper.
4.
Coat the chicken fillets in the peanut butter and roll in the peanuts.
5.
Heat the oil in a frying pan and cook the fillets for about 6 minutes, until cooked through, with no trace of pink juices.
6.
Serve the chicken with the dip. Garnish with herbs.
