24 ozs boneless, skinless Chicken breasts (halves)
cayenne pepper (to taste)
3 Tbsps Peanut oil
2 red chili peppers (rinsed; deseeded and chopped)
3 cloves garlic cloves (peeled and roughly chopped)
2 scallions (rinsed; trimmed and roughly chopped)
1 small, red Bell pepper (rinsed; trimmed and roughly chopped)
1 small, green Bell pepper (rinsed; trimmed and roughly chopped)
½ cup shelled Peanuts (optional)
2 tsps sugar
2 ¾ cups small, whole Baby corn
¼ cup Rice wine
soy sauce (to taste)

Preparation steps

Rinse the chicken under cold running water and pat completely dry with paper towels. Season with lightly with cayenne pepper and cut into bite-size pieces.

In a wok or skillet, heat the peanut oil over medium-high heat until very hot. Add the chicken and stir-fry for about 3 to 4 minutes. Add the chili peppers, garlic, scallions, bell peppers, peanuts and sugar; continue to stir-fry for 2 to 3 minutes.

Add the baby corn, rice wine and soy sauce and simmer for 1 to 2 minutes.
4.
Divide between plates and serve.
