- ½ cup self-rising flour
- ½ cup Corn starch
- 1 Tbsp melted butter
- 1 Pineapple (quartered lengthways, sliced)
- For the sauce
- 4 Passion fruit (halved, flesh scooped out)
- 1 Lime (juice)
- 3 Tbsps honey

Preparation steps
1.
For the batter, mix the flour with the cornflour, butter and salt. Add approx. 125 ml cold water to make a thick batter.
2.
Heat the oil in a pan until it forms bubbles when you dip in a spoon.

Dip the pineapple pieces into a little cornflour and then in the batter until covered. Fry in portions for 2-

3 minutes until golden brown. Drain on kitchen paper.
5.
For the sauce, mix the passion fruit with the lime juice and honey.
6.
Serve the pineapple tempura with passion fruit sauce.
