- 4 cups floury potatoes
- 1 ⅓ cups Feta (cubed)
- 2 eggs
- 3 Tbsps Corn starch
- 1 tsp Baking powder
- 2 Tbsps fresh parsley (chopped)
- 2 Tbsps soft butter
- Nutmeg
- vegetable oil (for frying)

Preparation steps
1.
Cook the potatoes in boiling salt water for around 25-30 minutes until tender. Drain, mash and leave to cool.
2.
Mash the feta with a fork and add to the potatoes along with the eggs, cornflour, baking powder, parsley and the butter. Mix well to create a pliable dough. If necessary add a little more flour. Season with salt, ground black pepper and nutmeg.
3.
Take tablespoons of the mixture and fry them in hot oil until golden brown and crispy. Pat dry on kitchen paper.
