- For marinade
- ⅔ cup extra virgin olive oil
- 3 Tbsps fresh lemon juice
- 1 ½ tsps salt
- 1 tsp freshly ground Black pepper
- 3 Chicken breasts (boneless and skinless)
- For fixings
- 2 Sandwich breads
- ½ cup Cucumber (sliced)
- ½ cup carrots (shaved)
- 4 Tbsps Mayonnaise

Preparation steps
1.
Whisk 1/3 cup of oil, 3 tablespoons of lemon juice, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper in a resealable plastic bag. Add the chicken and seal the bag. Massage the marinade into the chicken. Refrigerate at least 30 minutes and no more than a day - turn occasionally.

Bake chicken at 350 degrees for 30 minutes.

Spread mayonnaise equally on two buns and place chicken on top, add sliced cucumbers and carrots.
