- ¾ cup canned, solid, white Tuna (drained and flaked)
- 1 small onion (peeled and finely chopped)
- ½ Cucumber (peeled and finely diced)
- ½ red Bell pepper (rinsed; trimmed and finely diced)
- ½ yellow Bell pepper (rinsed; trimmed and finely diced)
- 2 Tbsps Mayonnaise
- 8 slices sandwich white bread (crusts removed)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 8 wooden Toothpicks
- 8 sprigs fresh rosemary optional (for garnish)

Preparation steps
1.
In a medium bowl, stir together tuna, onion, cucumber, peppers and mayonnaise.
2.
Spread a thin layer of the tuna mixture evenly over 8 slices of bread. Season to taste with salt and pepper.
3.
Tightly roll each bread slice and secure with a wooden toothpick and rosemary sprigs (optional). Serve.
