Preparation steps

Peel potatoes and cut into slices. Peel the onion and dice into cubes. Cook both together in a pot in the vegetable broth until soft, about 20 minutes. Stir in cream, remove from heat and puree. Blanch tomatoes, peel, quarter, core and dice finely.

Rinse spinach and wild garlic leaves, shake dry and cut into fine strips. Add spinach to the soup and cook briefly. Add wild garlic leaves and bring to a brief boil. Serve soup sprinkled with diced tomatoes.
