1 lemon (juiced)
250 grams sugar
400 grams Mascarpone

Preparation steps

Rinse raspberries and boil in a pot with sugar and lemon juice. Pass through a sieve and place back in a pot. Simmer briefly over low heat to reduce liquids slightly. Then let cool and mix in a bowl with mascarpone. Beat cream until stiff and fold into mascarpone. Pour into an ice cream machine and process for about 30 minutes.

If there is no ice cream machine, pour ice cream mixture into a shallow dish and place in the freezer, stirring occasionally, for about 3 hours.
