- 3 Tbsps Oil
- 2 onions (finely chopped)
- 3 cloves garlic cloves (crushed)
- 2 red chili peppers (deseeded and cut into rings)
- ½ tsp ground Cardamom
- 1 tsp ground cinnamon
- 1 tsp ground Cumin
- 1 tsp ground cilantro
- 1 Tbsp Curry powder
- 1 tsp ground ginger
- ⅓ cup Almond flour
- 1 ⅔ cups Coconut milk
- 1 ⅓ cups chicken stock
- 2 large Chicken breasts (skinned and cut into bite size pieces)
- 3 Okra (pods)
- To garnish
- 2 Tbsps shelled Peanuts
- fresh cilantro
- Coconut shaving

Preparation steps
1.
Heat the oil in a large pan and gently cook the onion until soft but not brown.
2.
Add the garlic and chilli peppers, cook for 1 minute then add the spices. Cook for 2 minutes, stirring all the time, then add the almonds, coconut milk and stock.
3.
Bring to a boil then turn the heat down, add the chicken and simmer very gently for 30 minutes.
4.
Add the okra, season with salt and pepper and simmer for a further 10 minutes.
5.
Serve in bowls, garnished with the peanuts, coriander and coconut shavings.
